Grun Bohna und Kneebble Suppe is a traditional recipe handed down through generations and brought to Hays by the Volga Germans. Because so many local restaurants serve this soup, the Kansas Sampler Foundation named Hays the Green Bean Dumpling Soup Capital of Kansas. The restaurants that serve this warm, hearty dish year-round are Augustine's Bakery, Gella's Diner, Trio Tap House (seasonally), JD's Country Style Chicken and Vernies.
